I'm making spanish rice for dinner to go with the veggie chicken enchiladas. I'll use some of the following ingredients, give or take a few:

3 cups rice -- cooked
1 large onion -- chopped
4 stalks celery -- chopped
1 large green pepper -- chopped
2 cloves garlic -- minced
1 tablespoon vegetable oil
1 teaspoon chili powder
1 teaspoon cumin
1 cup tomatoes -- chopped
1 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon pepper

I'll have to make the lasagna this weekend. I've had pasta for two days in a row; breakfast, lunch and dinner.

She always works at some booth I can't remember. Maybe she'll be there next year??? I was trying to get a pic of the girl looking at me. I met her last year and saw her again at a show in KC. Well, this weekend I'm off down south.
